Purple basil provides a colorful twist on this simple, traditional Italian salad.
Yield: 4 servings
- 3-4 large ripe tomatoes, cut into ¼-inch thick slices
- 1 pound fresh mozzarella, cut into ¼-inch thick slices
- Handful of large basil leaves (about 25 leaves)
- Olive oil
- Salt and pepper
Alternate layers of tomato slices, basil leaves, and mozzarella slices to create short stacks. Lightly drizzle with olive oil and season with salt and pepper. Top each stack with a fresh basil leaf.
