K is for kale—this tasty, easy-to-grow plant is loaded with vitamin K, as well as vitamins A and C. Winterbor, a Dutch variety, yields abundant blue-green, frilly leaves. One of the most cold hardy of all vegetables, it is an excellent fall garden item.

Kale is very tolerant of cold and frost. Plant in spring or late summer for a fall crop. Kale is a good choice for growing veggies in spots with light afternoon shade. Water regularly. If tall plants topple, secure their stems loosely to a stake.

Harvest and Use »

Harvest lower leaves first and continue harvesting leaves for several weeks, or harvest the entire plant. Wash the leaves thoroughly, as frilly edges can hide dirt. Steam kale or use in soups and other recipes, including ones with Asian flavors.
